Why pectin has become the default for supplements
Both systems are widely used. Pectin is often selected for supplement gummies for four practical reasons.
Addressable market
A pectin base is compatible with vegetarian and vegan positioning, and avoids the sourcing questions that bovine and porcine gelatin raise for Halal and Kosher certification. For a supplement brand selling into diverse channels, that removes several conversations at once.
Heat performance
This is the underrated one. Gelatin gels have a relatively low, sharp melting transition, while pectin systems generally show a higher and broader transition. That can improve shipping tolerance, but the finished product still needs heat and package testing because water activity, sweetener system and storage conditions all affect performance.
Flavour release
Pectin releases flavour faster and finishes cleaner. For high-load formulas where you are actively masking an unpleasant active — magnesium's mineral bitterness, creatine's chalkiness, apple cider vinegar's sharpness — faster flavour release gives the masking system more to work with.
Behaviour at high active load
High-load formulas change viscosity, depositing behavior and set. Pectin can be a useful platform, but the practical active ceiling is formula-specific and must be confirmed through feasibility and pilot work rather than inferred from the gelling agent alone.
When gelatin is still the right answer
Pectin is not universally better, and choosing it reflexively is its own mistake.
If chew is the product experience. Gelatin's elastic, longer chew is what many consumers associate with a gummy. If your brand competes on eating experience rather than dietary positioning, gelatin may simply taste more like what people expect.
If your active is pH-sensitive. Pectin systems need controlled acidity to set correctly, which constrains formulation. Gelatin is more forgiving across a pH range, and for some actives that flexibility matters more than the positioning advantages.
If cost is decisive at scale. Gelatin is often less expensive per unit of gelling capacity. At very high volumes that difference is real, though for most supplement brands it is small relative to the cost of the active itself.
What this decision constrains downstream
Choosing a base is not a reversible preference. It affects:
- Claims you can make. Vegan and vegetarian claims depend on it, and switching bases mid-life means relabelling.
- Sugar system compatibility. Sugar-free systems built on sugar alcohols such as maltitol interact differently with each base. Our standard sugar-free system is built around pectin.
- Achievable active load. At the high end, the base is part of what determines the ceiling.
- Shelf life and packaging. Heat performance influences whether your product survives your actual distribution conditions, which may include a non-climate-controlled fulfilment centre.
How to decide
Work backwards from your channel and your active, not from the base.
- Does your positioning require vegan or vegetarian? If yes, pectin — decision made.
- Is your active high-load or difficult to mask? Compare both systems during feasibility work rather than assuming one will carry the target.
- Will your product face high-temperature distribution? Favor the system that passes finished-product heat and packaging tests.
- Is a long chewy bite central to the brand experience? Then gelatin deserves serious consideration.
